about polenta

Notwithstanding my intense dislike for the smell and taste of poorly prepared polenta, here are some data about this food that people either love or hate. Polenta is really definable as pearl barley, and is known today in some quarters as corn meal mush. Pearl barley is the result of rubbing or grinding barley seed until it becomes coarse, small granules not unlike small pearls, albeit far less valuable to many, except as a food stuff. Adding water or another liquid to pearl barley creates a barley malt which can be very beneficial to infants since it has many minerals and can be pleasantly tasteful. On the other hand, corn crushed down to a fine dust from the grain stage is like a pollen. Mixed with water or milk it becomes a "mush" which is rather thick, yet soft; this can be fried and mixed with other ingredients. People who love mush have their own recipes they cherish and hand down to younger generations. Polenta, pearled barley, corn meal mush - however you know it - is a staple from Italy that will either win your heart and taste buds, or have you throwing your plate across the room!

Finally! I now know what it is that I will never ever try...
I never before knew there were so many people who do not like polenta, although I do agree it is a dish that can more easily be ruined than some other foods. I do not make it often, but when I do it is with corn, not barley, and my favorite flavor is made with finely grated pecorino, jalapeno pepper jack...and lots of butter.

Well properly prepared, polenta is very good, not mushy at all and it can be eaten in several different ways. Yummy, really... :)

It just hit me that polenta you're talking about is probably store-bought, from the package. In that case, I 100% agree with you, though. Just seeing the package in the fridge at my grocery store makes me nauseous. The real polenta (like all the best foods) has to be made from scratch, to a perfect consistency and served with some other things to compliment it.
